About the Book
The subject “The Science of Food, Nutrition, and Wellness” holds vital importance in today’s health-conscious and nutritionally aware society. With growing concerns over food safety, lifestyle diseases, and the integration of modern technologies in the food industry, this course has been carefully structured to provide students with a thorough understanding of the relationship between food, nutrition, and human health.
This syllabus has been designed to cover core concepts, emerging issues, and practical applications, systematically organized into five focused units:
- Unit I introduces various food resources from plant, animal, and microbial origins, and emphasizes the importance of food safety, microbiological indicators, and regulatory practices like HACCP to ensure the quality and safety of consumables.
- Unit II focuses on essential nutrients including carbohydrates, proteins, fats, minerals, and vitamins. It also highlights modern biotechnological advancements in food additives such as bioflavors, colors, and recombinant enzymes used in the food sector.
- Unit III deals with the emerging field of nano food technology, discussing the application of nanomaterials in food processing and packaging, along with related safety guidelines and the principles of food product development and shelf-life assessment.
- Unit IV addresses food-related nutritional disorders and lifestyle diseases such as cardiovascular ailments, obesity, and diabetes. It also covers the concept of energy balance and equips students with techniques for individual diet planning and nutrient requirement calculations.
- Unit V sheds light on contemporary global concerns surrounding genetically modified (GM) foods, their safety, regulatory frameworks, labeling issues, and case studies, fostering critical awareness of this debated subject.
This course aims to impart both fundamental and advanced knowledge in nutrition science, promote awareness of food safety measures, and prepare students to address modern health challenges through scientifically-informed practices.
Author Details

KRISHNA KUMAR M serves as Head of the Department in the Department of Electronics and Communication Engineering at Grace College of Engineering, Thoothukudi. He earned his Bachelor’s degree in Electronics and Communication Engineering from Noorul Islam College of Engineering, Nagercoil, Tamil Nadu, India, and completed his Master’s degree in Communication Systems at Mepco Schlenk Engineering College, Sivakasi, Tamil Nadu, India. Currently, he is pursuing Ph.D. in Information and Communication Engineering at Anna University, Chennai, Tamil Nadu, India. With over 13 years of experience in the teaching profession, he has published and presented more than 43 papers in esteemed national and international journals and conferences. He has also authored 10+ books. His research interests include antenna design, medical instrumentation, and optical communication. Additionally, he has authored significant books in the field, further contributing to the academic community.

ABARNA S serves as an Assistant Professor in the Department of Computer Science and Engineering at Grace College of Engineering, Located on Tiruchendur Road, Mullakkadu, Tuticorin, Tamil Nadu, India. She earned her Bachelor’s Degree in Computer Science and Engineering from Dr. Sivanthi Aditanar College of Engineering, Tiruchendur, Tamil Nadu, India, and later obtained Master of Engineering in Computer Science and Engineering from the same institution. Currently, she is pursuing Ph.D. in Information and Communication Engineering at Anna University, Chennai, Tamil Nadu, India. Abarna has dedicated over an 11+ years experience to the teaching profession and has authored several books. She boasts an impressive publication record, with over 55 papers presented in various National and International Journals and Conferences. Her research interests encompass Python Programming, C Programming and Deep Learning. Additionally, she has authored significant books in the field, further contributing to the academic community.
